300 g Wholemeal Strong Bread Flour<br />
60 g Margarine or Butter<br />
115 g Brown Sugar<br />
150 g Raisins<br />
150 g Honey<br />
2 Eggs <em>(medium)</em><br />
75 mls Milk<br />
1 tsp Cinnamon<br />
1 tsp Mixed Spice<br />
1 tsp Bicarbonate of Soda<br />
1 tsp Baking Powder<br />
Pinch of Salt</p>
<p><em>For the Topping:</em><br />
30 g Brown Sugar<br />
¼ tsp Cinnamon<br />
30 g Candied Mixed Peel</p>
<p>Pre-heat the oven to (350°F, 180°C, Gas 4). This recipe takes about 1 hour to bake.<br />
Heat the Margarine in a pan, stir in the Honey and Sugar, when well mixed allow to cool.<br />
Stir in the Flour, Salt, Baking Powder, Bicarbonate of Soda, Mixed Spice, Cinnamon and Raisins.<br />
Mix the Eggs and Milk together, add to the other ingredients and mix well until smooth.<br />
Pour into a greased  loaf tin and sprinkle the top with the Brown Sugar, Cinnamon and Chopped Mixed Peel.<br />
Bake in the pre-heated oven for 30 minutes.  Turn the oven down to (300°F, 150°C, Gas 2) and continue baking for a further 30 minutes.  When finished allow to cool for 5 minutes then turn out onto a wire tray to cool fully.<br />
