Easy Peasy Honey Fruit Cake

Ingredients and Method:
300 g Wholemeal Strong Bread Flour
60 g Margarine or Butter
115 g Brown Sugar
150 g Raisins
150 g Honey
2 Eggs (medium)
75 mls Milk
1 tsp Cinnamon
1 tsp Mixed Spice
1 tsp Bicarbonate of Soda
1 tsp Baking Powder
Pinch of Salt
For the Topping:
30 g Brown Sugar
¼ tsp Cinnamon
30 g Candied Mixed Peel
Pre-heat the oven to (350°F, 180°C, Gas 4). This recipe takes about 1 hour to bake.
Heat the Margarine in a pan, stir in the Honey and Sugar, when well mixed allow to cool.
Stir in the Flour, Salt, Baking Powder, Bicarbonate of Soda, Mixed Spice, Cinnamon and Raisins.
Mix the Eggs and Milk together, add to the other ingredients and mix well until smooth.
Pour into a greased loaf tin and sprinkle the top with the Brown Sugar, Cinnamon and Chopped Mixed Peel.
Bake in the pre-heated oven for 30 minutes. Turn the oven down to (300°F, 150°C, Gas 2) and continue baking for a further 30 minutes. When finished allow to cool for 5 minutes then turn out onto a wire tray to cool fully.
